Mojo Pork Chops with Arroz Congrí

4 each Garlic Cloves

1 tsp Oregano, dried

1 tsp Cumin, ground

2 each Limes

2 each Lemon 

2 each Orange 

1 Cup of Cilantro

Olive Oil

2 Each Boneless Pork Chops (6 ounces each)

4 ounces Pork Belly or Bacon

1/4 each Green Bell Pepper

1/2 each Yellow Onion

1 cup Black Beans, Canned

1/2 cup White Rice, long grain 

1 each Bay Leaf

1 1/2 cups Chicken Stock

Salt & Pepper To Taste

1 each Sweet Plantain (Maduro) *Optional

1/2 Tbsp Sugar *Optional

    Have a large shallow pan with a lid, large sauté pan or skillet (cast iron will work), tongs, and wooden spoon handy.
