Shoyu Ramen | Pork Belly, Soft Boiled Egg, Bok Choy, Scallions
2 Ramen Nests
1 each 4" Piece of Kombu
1/4 cup Low Sodium Soy Sauce
1 Tbsp Sake
1/2 Tbsp Mirin
6 ounces Pork Belly Chunk
Vegetable Oil As Needed
4 cups Chicken, Vegetable, or Pork Stock or Broth
1 inch Ginger
1 Tbsp Bonito Flakes
1/2 each Yellow Onion
3 each Garlic Clove
1/2 each Carrot
4 each Dried Shiitake Mushroom
Water As Needed
5 each Scallions
1 each Baby Bok Choy
1 each Egg
1 sheet Nori (shredded is fine too!)
1 Tbsp Crushed Dried Red Asian Peppers
1 Tbsp Sesame Oil
1 Tbsp Canola Oil
1 tsp Sesame Seed
1/2 Tbsp Rice Wine Vinegar
2 ounces Japanese Fish Cake (Narutomaki)*

Equipment
Have a medium stock pot, a small stock pot, a ladle, a slotted spoon, and a pair of tongs handy!
