2 Each Pork Loin, 4 oz, pounded to 1/4"

1 cup Flour, All Purpose 

3 each Eggs

1 Cup Panko Breadcrumbs 

1 each Egg

1 cup Raw Short Grain White Rice (Sushi Rice) 

2 each Scallions 

1 each Yellow Onion

1/2 cup Light Soy Sauce

1 Tbsp Rice Wine Vinegar

2 Tbsp Mirin Seasoned Cooking Wine

2 Tbsp Bonito Flakes 

Canola Oil As Needed

Salt & Pepper To Taste

    Have a medium sauce pot with a lid or rice cooker, a large sauté pan or skillet with a lid, tongs, and a wooden spoon handy.
