Tortellini with Spinach & Burro Fusso
1 1/2 cup All Purpose Flour
2 eggs Whole
1 egg Yolk
1 cup Ricotta Cheese
1/4 cup Parmesan Cheese
1 each Egg yolk
1 each Lemon
1 Tbsp Parsley
Olive Oil As Needed
2 cups Spinach
1 cup Arugula
1/2 lb Butter
Have a pot for boiling pasta filled with water, a large heavy bottomed saucepan with lid, wooden spoon, cheese grater, box grater, and a sauté pan handy. Pasta roller would be best but not needed.
